Zucchini Noodles With Shrimp Scampi

Instructions

  1. Spiralize zucchini to create zoodles.

  2. Season shrimp with salt and pepper.

  3. Heat butter and oil in a pan over medium heat; add garlic and seasoned shrimp, cooking for 2-3 minutes until pink, then remove and set aside.

  4. Deglaze the pan by adding lemon juice and vermouth, simmering for 1-2 minutes.

  5. Stir in lemon zest, parsley, and red pepper flakes.

  6. Add zucchini noodles and sauté for 1-2 minutes until tender and coated in sauce.

  7. Return shrimp to the pan; serve with Parmesan cheese.
