Trim and shred zucchinis; peel and mince garlic or shallot.

In a large frying pan, melt butter or heat oil over medium-high heat, then add garlic/shallot and cook for 30 seconds until fragrant.

Add shredded zucchini and salt to the pan; stir to combine.

Reduce heat to a gentle sizzle and cook slowly for 30 minutes, stirring occasionally and scraping the pan.

If zucchini begins to stick, add 1/4 cup water, adding more as needed, until the zucchini is supremely tender and melting.
