Instructions

  1. Preheat the oven to 325 F and grease two 8 1/2-by-4 1/2-inch loaf pans.

  2. Combine flour, baking powder, soda, cinnamon, salt, and nutmeg; stir well and set aside.

  3. In a mixing bowl, whisk eggs with vegetable oil, sugar, and vanilla extract.

  4. Add the dry ingredients to the wet mixture and mix until just blended.

  5. Fold in the zucchini and walnuts until thoroughly incorporated.

  6. Divide the batter evenly into the prepared pans.

  7. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out dry.
