Zucchini and Green Tomato Relish Recipe

Instructions

  1. Start boiling water for a water bath canner.

  2. Combine ground zucchini, green tomatoes, peppers, onion, and pickling salt in a large nonreactive container; stir in 3 cups of ice. Cover and let sit for 3 hours.

  3. Drain and lightly rinse the vegetable mixture.

  4. In a large nonreactive pot, combine vinegar, sugar, pickling spices, mustard seeds, turmeric, and garlic. Bring to a boil, then reduce heat and simmer for 5 minutes.

  5. Add the drained vegetable mixture to the pot. Slowly bring to a boil and simmer for 15 minutes.

  6. Pack the hot relish into clean jars. Wipe rims and seal with 2-part lids.

  7. Process jars in the boiling water bath canner for 10 minutes.
