Instructions

  1. Wash and diagonally slice leeks into 2-inch pieces.

  2. Wash, peel, and diagonally slice carrots into 1/4-inch pieces.

  3. Combine leeks, carrots, uncooked rice, sugar, salt, pepper, parsley, water, and lemon juice in a large saucepan.

  4. Bring the mixture to a boil, then reduce heat, cover, and simmer until water is nearly absorbed and vegetables are very tender.

  5. Let the covered vegetables cool completely to room temperature in the pan.

  6. Gently move the vegetables to coat them with olive oil, then sprinkle with additional fresh parsley.

  7. Carefully transfer the dish to a serving plate.

  8. Serve at room temperature or chilled, optionally with an extra squeeze of lemon juice.
