Instructions

  1. Zest one lemon, carefully avoiding the bitter white pith.

  2. Extract 1/2 cup of fresh lemon juice.

  3. Combine the lemon juice and sugar in a small saucepan, then bring the mixture to a boil over medium-high heat.

  4. Reduce the heat to a gentle simmer and cook for approximately 10 minutes until slightly thickened.

  5. Incorporate the reserved lemon zest, then transfer the syrup to a small metal bowl and cool for about 20 minutes.

  6. Remove and discard the zest, straining the syrup through a sieve if necessary to ensure no small pieces remain.
