Instructions

  1. Preheat the oven to 250°F.

  2. Distribute popcorn into two 13x9-inch pans, ensuring all unpopped kernels are removed.

  3. Combine salt, butter, brown sugar, and corn syrup in a large saucepan; bring to a rolling boil over medium-high heat, stirring frequently.

  4. Boil the mixture hard for 5 minutes, then remove from heat and stir in baking soda until foamy.

  5. Immediately pour the caramel mixture over the popcorn and mix thoroughly.

  6. Bake for 60 minutes, stirring every 15 minutes, until the corn is glazed and crisp.

  7. Cool completely on wire racks, stirring occasionally.

  8. Spread the cooled caramel corn onto two 15x10-inch pans.

  9. Drizzle with melted white and dark chocolate chips, then let stand until set.

  10. Store in airtight containers at room temperature.
