Instructions

  1. Start boiling a large pot of water.

  2. In a saucepan, heat mirin, then add soy sauce and dashi, bring to a boil, and cool the sauce.

  3. Add dried soba noodles to the boiling water, stir, and cook for 5 to 6 minutes until tender.

  4. Drain noodles in a colander and rinse under cold running water to remove starch.

  5. Divide soba among four serving plates or zaru.

  6. Portion dipping sauce into four small cups and serve with toppings alongside the soba.
