Instructions

  1. Start boiling salted water.

  2. Add 1 1/2 pounds peeled, 1-inch-chunked yuca to the boiling water and cook until tender (about 30 minutes).

  3. Drain the yuca, transfer it to a serving dish, and cover to keep warm.

  4. In a bowl, combine 1-2 thinly sliced red onions, 1/4 cup orange juice, 1/4 cup lime juice, 1 tablespoon chopped cilantro, and 6 minced garlic cloves; pour this mixture over the warm yuca.

  5. Heat 1/4 cup olive oil, 1/2 teaspoon dried oregano, 1/4 teaspoon ground cumin, kosher salt, and black pepper in a pan for about 1 minute until hot, then pour the hot oil over the yuca.

  6. Garnish with additional cilantro and orange zest if desired.
