Your Best Grilled Burger

Instructions

Preheat a gas grill to high for 10 minutes, or prepare a hot charcoal grill.

Divide 21 ounces (1 1/3 pounds) of 80% lean ground beef into 4 equal portions, then shape into patties slightly wider than the buns, creating a central depression with a 1/2-inch rim; handle the meat minimally.

Season both sides of the patties with 1 1/2 teaspoons fine salt and 1 teaspoon freshly ground black pepper.

Place burgers on direct heat; cook for 4 to 5 minutes without flipping until charred and easily released from the grate.

Flip patties and cook for another 4 to 5 minutes, or until desired doneness (135 F for medium-rare, 145 F for medium).

During the last minute of cooking, toast 4 sesame burger buns on the grill and melt 1 to 2 slices of American cheese on each burger, if desired.

Serve immediately on toasted buns with chosen toppings.
