Instructions

  1. Preheat the oven to 425 F/220 C/Gas Mark 7.

  2. Whisk eggs and milk in a large bowl.

  3. Add a pinch of salt, whisk again, and let stand for 10 minutes.

  4. Gradually whisk in the flour, one-third at a time, until the batter is thick and smooth.

  5. Let the batter rest at room temperature for at least 30 minutes.

  6. Place lard, drippings, or 1/2 teaspoon of oil into a pudding tin and heat in the oven until smoking.

  7. Whisk 2 tablespoons of cold water into the batter.

  8. Fill each tin one-third full with batter and quickly place in the oven.

  9. Bake for about 20 minutes until puffed and golden brown; repeat with remaining batter.
