Yi Mein (Auspicious Longevity Noodles)
A simple, umami-rich longevity noodle dish can be prepared as a vegetarian entree or enhanced with seafood like lobster or abalone.

Instructions

Start boiling 8 to 12 ounces (230 to 340 grams) dry yi mein noodles.

Combine 2 tablespoons soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce, a dash of white pepper, 1 tablespoon sesame oil, 1 tablespoon Shaoxing wine, and 1 tablespoon brown sugar in a small bowl.

Cook the noodles for 1 to 2 minutes until al dente; strain and set aside.

Preheat a wok over medium-high heat. Add 3 tablespoons neutral oil, 6 chopped garlic cloves, and 1/2 inch minced fresh ginger.

Once garlic turns golden, add 8 to 10 rehydrated, sliced shiitake mushrooms and any optional cooked proteins; stir-fry until golden.

Add the strained noodles, stir, then pour in the sauce.

Gently incorporate 5 scallions (cut into 3 to 4-inch segments) and cook for 20 to 30 seconds before removing the dish from heat.
