Instructions

  1. Boil water for blanching tomatoes and sterilizing 3 half-pint jars; boil jars for 15 minutes and keep them hot.

  2. Cut tomato stems, place in a heatproof bowl, and pour boiling water over them.

  3. Once cooled, drain tomatoes, peel skins, remove seedy gel, and coarsely chop.

  4. Combine chopped tomatoes with sugar and honey, then refrigerate at least two hours or overnight.

  5. Seed and finely chop lemons (including peels); peel and finely chop ginger.

  6. Add prepared lemons and ginger to the tomato mixture in a large pot.

  7. Bring the mixture to a boil, stirring, until it reaches the setting point.

  8. Ladle preserves into sterilized half-pint jars, leaving 1/2-inch headspace.

  9. Process filled jars in a boiling water bath for 5 minutes.
