Yakitori Negima (Japanese Grilled Chicken and Scallion Skewers)

Instructions

  1. Soak bamboo skewers in cold water for at least one hour or use metal skewers.

  2. Thread chicken and scallions onto the prepared skewers.

  3. Combine soy sauce, mirin, sake, sugar, and ginger in a saucepan; boil then simmer for 10-12 minutes until the sauce slightly thickens.

  4. Preheat a grill to medium (350°F to 375°F).

  5. Baste the skewered chicken and scallions with half of the sauce, then grill for 7-8 minutes, turning and basting until chicken is cooked through.

  6. Serve the grilled yakitori with the remaining sauce.
