Instructions
-
Add about 1 inch of oil to a small frying pan or wok; heat over medium-high heat.
-
Combine shrimp, garlic, finely chopped coriander, fish or soy sauce, oyster sauce, brown sugar, and chili in a bowl. Toss to coat and marinate for 10-30 minutes.
-
Retoss marinated shrimp. To wrap, lay a wonton wrapper diagonally, brush with beaten egg, and place a shrimp horizontally in the center. Fold the right corner over the shrimp's bottom, bring up the bottom, tuck over, then roll tightly and press to seal. Place wrapped shrimp on a cornstarch-dusted plate.
-
Test oil temperature: if a dipped shrimp sizzles, the oil is ready. Fry shrimp for about 1 minute per side until golden brown and crunchy. Reduce heat to medium after the first batch.
-
Drain fried shrimp on paper towels and serve immediately, optionally with Thai sweet chili sauce. Keep warm in an uncovered oven for up to 1 hour if needed.
