Wonton Wrapped Shrimp

A delightful crispy appetizer featuring shrimp encased in wonton wrappers and then fried.

Instructions

  1. Add about 1 inch of oil to a small frying pan or wok; heat over medium-high heat.

  2. Combine shrimp, garlic, finely chopped coriander, fish or soy sauce, oyster sauce, brown sugar, and chili in a bowl. Toss to coat and marinate for 10-30 minutes.

  3. Retoss marinated shrimp. To wrap, lay a wonton wrapper diagonally, brush with beaten egg, and place a shrimp horizontally in the center. Fold the right corner over the shrimp's bottom, bring up the bottom, tuck over, then roll tightly and press to seal. Place wrapped shrimp on a cornstarch-dusted plate.

  4. Test oil temperature: if a dipped shrimp sizzles, the oil is ready. Fry shrimp for about 1 minute per side until golden brown and crunchy. Reduce heat to medium after the first batch.

  5. Drain fried shrimp on paper towels and serve immediately, optionally with Thai sweet chili sauce. Keep warm in an uncovered oven for up to 1 hour if needed.
