Winter Squash Spice Cake

Instructions

  1. Preheat oven to 325°F.

  2. Butter an 8x8 baking pan.

  3. Cream butter and brown sugar in a large bowl until light and fluffy, about 2 minutes.

  4. Incorporate eggs one at a time, beating for 30 seconds after each.

  5. Stir in vanilla and squash.

  6. In a separate bowl, combine flour, baking powder, baking soda, salt, and spices; then add to the squash mixture and stir until just combined.

  7. Pour batter into the prepared pan and bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.

  8. Cool cake for at least 10 minutes before slicing and serving.
