Wilted Spinach With Bacon

A quick-to-prepare wilted spinach salad with a tangy, sweet-sour dressing is an excellent side dish for various gatherings.

Instructions

  1. Wash and dry spinach thoroughly, removing large stems and tearing larger leaves; finely chop the onion.

  2. Dice bacon, cook in a skillet over medium heat until crisp, then remove and drain on paper towels, reserving drippings in the pan.

  3. Sprinkle flour into the reserved bacon drippings, stirring constantly, and cook for 2 minutes.

  4. Add sugar, vinegar, and salt to the pan; bring to a simmer, adjusting consistency with water and seasoning with pepper and more salt as needed, then remove from heat.

  5. Place the dried spinach in a large bowl, pour the warm dressing over it, and add the chopped onion, tossing gently to coat.

  6. Sprinkle the crispy bacon over the salad and serve immediately.
