Wilted Spinach With Bacon
A quick-to-prepare wilted spinach salad with a tangy, sweet-sour dressing is an excellent side dish for various gatherings.

Instructions

Wash and dry spinach thoroughly, removing large stems and tearing larger leaves; finely chop the onion.

Dice bacon, cook in a skillet over medium heat until crisp, then remove and drain on paper towels, reserving drippings in the pan.

Sprinkle flour into the reserved bacon drippings, stirring constantly, and cook for 2 minutes.

Add sugar, vinegar, and salt to the pan; bring to a simmer, adjusting consistency with water and seasoning with pepper and more salt as needed, then remove from heat.

Place the dried spinach in a large bowl, pour the warm dressing over it, and add the chopped onion, tossing gently to coat.

Sprinkle the crispy bacon over the salad and serve immediately.
