Preheat the oven to 375 F and spray a slotted broiler pan.

Heat olive oil in a skillet over medium heat, then cook minced onion and garlic for 5 minutes until tender.

Transfer cooked vegetables to a large bowl. Add cooked wild rice, jalapeno (if using), eggs, tomato juice, milk, basil, and thyme; mix thoroughly.

Add ground beef and pork, then mix gently until combined. Form into a loaf on the prepared broiler pan.

In a small bowl, combine chili sauce, mustard, and smoked paprika. Spread this mixture over the meatloaf, then top with bacon slices, tucking them under.

Bake for 1.5 hours or until the internal temperature reaches 160 F, reducing heat to 350 F after 50 minutes if browning too much. Let stand, covered, for 10 minutes before slicing.
