Wiener Schnitzel

Instructions

  1. Preheat the oven to 250 F.

  2. Cut pork tenderloin into 6 pieces, then pound each to 1/3 inch thickness.

  3. Season pork pieces with salt, pepper, and lemon juice.

  4. Prepare three shallow dishes: one with combined paprika and flour, one with beaten egg, and one with breadcrumbs.

  5. Dip each pork piece sequentially into the flour mixture, then egg, then breadcrumbs, pressing to coat fully.

  6. Place coated pork on a wire rack.

  7. Melt butter with oil in a large skillet over medium-high heat.

  8. Cook pork pieces, one or two at a time, for 2 to 4 minutes per side until browned and tender.

  9. Transfer cooked pork to a plate in the preheated oven to keep warm.

  10. Repeat until all pork is cooked, then serve immediately with lemon wedges.
