Whole Wheat French Bread

Instructions

  1. Combine water and yeast in a bowl, then mix in brown sugar, salt, and whole wheat flour, followed by enough bread flour to form a cohesive dough.

  2. Knead dough on a floured surface for 4 minutes until soft and smooth.

  3. Place dough in a greased bowl, turning to coat, then cover and let rise for 1 hour until doubled.

  4. Grease a baking sheet and sprinkle with cornmeal.

  5. Punch down dough, then knead on a floured surface for 4 minutes to remove air bubbles.

  6. Roll dough into a 15-inch rectangle, then roll up lengthwise, pinching seams and tucking ends. Place on the prepared sheet.

  7. Cover and let rise again for 45 minutes until doubled.

  8. Preheat oven to 375 F.

  9. Cut 4-5 slashes across the top of the loaf.

  10. Bake for 25 minutes or until golden brown, then cool on a rack.
