Instructions
-
Heat 1-2 inches of oil or lard in a heavy pot to 350-375 F; set a cooling rack over a baking sheet and a bowl of sugar nearby.
-
Dissolve yeast in 1 cup warm water, letting it foam for 5 minutes.
-
Beat in whole wheat pastry flour, sugar, egg, butter, and salt; gradually add all-purpose flour until the dough pulls away from the bowl.
-
Cover the dough and let it rise in a warm place until doubled, approximately 2 hours, or chill overnight.
-
Punch down the dough, roll it to 1/2-inch thick on a floured surface, and cut out doughnut shapes and holes.
-
Cover the cut doughnuts and holes, allowing them to rise until puffy, about 2 hours, or chill overnight.
-
Fry 3-4 doughnuts or 8-10 holes at a time until lightly brown on one side, then flip and cook the other side.
-
Transfer cooked doughnuts to the cooling rack, drain briefly, then dip into sugar to coat.
-
Repeat with remaining dough and serve warm.
