Whole Wheat Doughnuts Recipe

Instructions

  1. Heat 1-2 inches of oil or lard in a heavy pot to 350-375 F; set a cooling rack over a baking sheet and a bowl of sugar nearby.

  2. Dissolve yeast in 1 cup warm water, letting it foam for 5 minutes.

  3. Beat in whole wheat pastry flour, sugar, egg, butter, and salt; gradually add all-purpose flour until the dough pulls away from the bowl.

  4. Cover the dough and let it rise in a warm place until doubled, approximately 2 hours, or chill overnight.

  5. Punch down the dough, roll it to 1/2-inch thick on a floured surface, and cut out doughnut shapes and holes.

  6. Cover the cut doughnuts and holes, allowing them to rise until puffy, about 2 hours, or chill overnight.

  7. Fry 3-4 doughnuts or 8-10 holes at a time until lightly brown on one side, then flip and cook the other side.

  8. Transfer cooked doughnuts to the cooling rack, drain briefly, then dip into sugar to coat.

  9. Repeat with remaining dough and serve warm.
