Whole Roasted Garlic

A simple method yields delicious, caramelized oven-roasted garlic from whole heads in less than an hour, perfect as a versatile condiment.

Instructions

  1. Preheat the oven to 400 F.

  2. Remove loose outer skin from each garlic head, then slice off the pointed top to expose the cloves.

  3. Place each head on a 6-8 inch foil square or in a muffin tin cup; drizzle with 1.5-2 teaspoons of olive oil and sprinkle with salt.

  4. Wrap each foil-placed head or cover the muffin tin securely with foil.

  5. Roast for 40-45 minutes until cloves are soft, caramelized, and golden brown.

  6. Carefully extract the roasted cloves from their skins.
