Whole Baked Sweet Potatoes

Instructions

  1. Preheat the oven to 425 F and line a baking pan with foil.

  2. Scrub and dry sweet potatoes, then prick each with a fork and rub with oil.

  3. Arrange potatoes on the lined pan and bake for 35 to 45 minutes, until fork tender.

  4. Cut a 1 1/2-inch "X" in the center of each potato and gently press from the sides to open.

  5. Top with butter, salt, and pepper; optionally season with paprika or a cinnamon-sugar mixture.
