White Wine Poached Pears

Instructions

  1. In a deep saucepan, combine white wine, water, cinnamon, vanilla bean, lemon zest, and lemon juice; bring the mixture to a simmer over medium-high heat.

  2. Peel the pears, keeping the stems intact, and shave a thin slice from the bottom so they can stand upright.

  3. Lower the heat to medium-low, then add the prepared pears upright into the simmering liquid, ensuring most of their height is covered.

  4. Poach the pears uncovered for about 10 minutes, until slightly tender but still firm.

  5. Remove the pears with a slotted spoon and place them on individual serving plates.

  6. Return the poaching liquid to a simmer over medium heat, add sugar, and reduce its volume by half for 6 to 8 minutes to create a thick syrup.

  7. Remove the cinnamon stick and vanilla bean from the syrup; strain the liquid through a fine sieve.

  8. Drizzle the warm wine syrup over each pear before serving.
