White Wine and Garlic Clam Pasta
A simple spaghetti dish features sweet clams steamed in a light broth made with fresh tomatoes, onion, garlic, and white wine.

Instructions

Start boiling a generous amount of well-salted water for the pasta. Meanwhile, soak the clams in cold water, then drain and rinse them.

In a large pot, heat oil and butter over medium heat, then sauté the onion for 2-3 minutes until translucent.

Add garlic, chili flakes, and salt to the pot and stir for 20 seconds.

Stir in chopped tomatoes and cook for approximately 7 minutes, until their juice begins to evaporate.

While the sauce cooks, prepare the pasta according to package instructions.

Increase the heat to medium-high, add the clams to the pot, and cover. After 2-3 minutes, add the wine, cover again, and shake the pot.

Cook the clams for another 5 minutes, or until they open. Stir in the parsley, cover, and shake once more, then discard any unopened clams.

Drain the cooked pasta and place it in a large serving bowl.

Pour the clam mixture over the pasta, mix thoroughly, and serve immediately.
