White Clam Sauce With Pasta

A versatile white clam sauce enhances spaghetti or linguine, and can also be used as a flavorful pizza topping.

Instructions

  1. Start boiling a large pot of water for pasta.

  2. Cook pasta until al dente. Simultaneously, heat oil in a large skillet over medium heat and sauté chopped onion for 2-3 minutes until soft.

  3. Add garlic and cook for 1 minute.

  4. Stir in minced clams with their liquid and bring to a boil.

  5. Lower heat and simmer for 5 minutes, or until liquid reduces by half.

  6. Add parsley, salt, and pepper, then toss to combine.

  7. Reserve 1/4 cup of pasta water. Drain pasta and add to the sauce, mixing to coat. Incorporate reserved cooking water to thicken the sauce as needed. Serve with grated Parmesan, if desired.
