Instructions

  1. Preheat the oven to 350 F and line 3 baking sheets with parchment paper.

  2. Sift together flour, cocoa powder, and salt.

  3. Beat softened butter and sugar until creamy, then mix in egg white, vanilla, and peppermint extracts.

  4. Slowly incorporate the sifted flour mixture until a firm dough forms.

  5. Divide the dough, roll each half between parchment paper to 1/8-inch thick, stack, and chill for 3 hours in the refrigerator or 1.5 hours in the freezer.

  6. Cut heart shapes from the chilled dough and transfer to the lined baking sheets.

  7. Bake for 15 minutes, then cool slightly on the pan before moving to a cooling rack.

  8. Re-roll dough scraps, chill if needed, cut more hearts, and bake.

  9. Melt white chocolate in 30-second intervals, stirring until smooth.

  10. Dip each cooled cookie into the melted chocolate, allowing excess to drip, then place on clean parchment paper.

  11. Immediately sprinkle with red or pink sugar or heart sprinkles.

  12. Allow the white chocolate to set for at least 45 minutes before storing.
