White Bean Soup With Smoked Ham Shank

Instructions

  1. Melt butter in a lidded pot over medium heat.

  2. Sauté onions and garlic until translucent.

  3. Add ham shanks, broth, water, and bay leaves; bring to a boil.

  4. Reduce heat to low, cover, and simmer for 1 hour.

  5. Uncover, then add beans, oregano, rosemary, red pepper flakes, and black pepper.

  6. Cover, bring back to a boil, reduce heat, and simmer, stirring occasionally, for 45 minutes, adding more liquid if needed.

  7. Uncover, taste, and season with salt if necessary.

  8. Add tomatoes, cover, and simmer for another 45 minutes, or until beans are tender.

  9. Remove ham shanks, slice meat from bones.

  10. Serve soup topped with ham pieces and fresh parsley.
