Whipped Brie
An ultra-creamy brie spread, featuring a flavorful date and honey topping, utilizes the entire cheese by also creating crispy brie rind chips.

Instructions

While cold, remove brie rind and place interior cheese in a mixer bowl; let it reach room temperature for 20-30 minutes.

Halve one shallot; thinly slice half for pickling and dice the other half for the topping.

In a small microwave-safe bowl, whisk vinegar, 1 teaspoon honey, 2 tablespoons water, and a pinch of salt. Microwave for 30 seconds until warm, then add sliced shallots and set aside to pickle.

Zest and juice a lemon into the bowl with the diced shallot.

Add 2 tablespoons olive oil, 1/4 cup honey, thyme, dates, nuts, 1/2 teaspoon salt, and pepper to the shallot bowl; mix to combine.

Add 1/3 cup oil and 1 tablespoon water to the brie in the mixer bowl. Beat on medium-high for 5-8 minutes until light and fluffy, scraping the bowl as needed.

Spread the whipped brie on a platter. Spoon half of the nut and date topping over it, reserving the rest.

Sprinkle pickled shallots, fresh thyme, and flaky salt over the brie. Serve with bread or crackers.
