West Indian Pumpkin Fritters (Frituras de Calabaza)

Sweet West Indian pumpkin fritters, commonly served in the Caribbean, make excellent appetizers or breakfast items, perfect with butter or syrup.

Instructions

  1. Start boiling water in a pot with salt; add 1 1/2-inch calabaza pieces. Simmer covered for 30 minutes until soft.

  2. Drain the cooked calabaza in a colander for 15 minutes to remove excess liquid.

  3. In a bowl, combine the drained calabaza with sugar, flour, and vanilla; mix thoroughly.

  4. Heat oil to 350°F in a frying pan. Drop tablespoonfuls of the mixture into the hot oil and cook for approximately 2 minutes per side until golden.

  5. Drain fritters on paper towels before serving.
