Welsh Leek and Cheese Rarebit

Instructions

  1. Preheat oven. Slice bread into 2 cm (1 inch) slices and toast for 5-8 minutes until crisp and lightly browned; cool on a rack.

  2. Melt butter in a saucepan, add leeks, and sweat for 2-3 minutes until soft.

  3. Stir in flour and mustard powder. Gradually add milk, stirring constantly, and simmer until a thick sauce forms; cook for a few more minutes.

  4. Stir in goats’ cheese until melted, then season with salt and pepper.

  5. Spoon rarebit onto the toasted bread. Broil until bubbling and serve immediately.
