Welsh Bara Brith Cake

Instructions

  1. Soak fruit in cold tea for at least 6 hours or overnight.

  2. Preheat the oven to 325 F (170 C/Gas 3) and grease a 2-pound (900-gram) loaf tin.

  3. Combine soaked fruit with marmalade, egg, brown sugar, spice, and flour; mix thoroughly.

  4. Spoon batter into the greased tin and bake for 1 hour 15 minutes, or until a cake tester comes out clean, covering with foil if the top browns too quickly.

  5. Remove from oven, let stand 5 minutes, then transfer to a rack.

  6. Brush with honey to glaze and cool completely.

  7. Slice and serve, optionally with butter, jam, or extra honey.
