Instructions

  1. Blend watermelon cubes into a smooth puree, then strain through a fine-mesh strainer to yield about 4 cups of juice.

  2. In a pitcher, combine torn mint leaves, fresh lime juice, and simple syrup; stir for 30 seconds to infuse.

  3. Add light rum and the watermelon juice to the pitcher; stir well.

  4. Serve the mojito in ice-filled glasses, garnishing each with a lime wheel, mint sprig, and watermelon wedge.
