Purée 3 cups of watermelon.

Combine the puréed watermelon with lime zest, lime juice, salt, garlic, tomato, cucumber, bell pepper, onion, vinegar, oil, optional jalapeño, ground pepper, herbs, and sugar in a large bowl.
