Instructions

  1. Purée 3 cups of watermelon.

  2. Combine the puréed watermelon with lime zest, lime juice, salt, garlic, tomato, cucumber, bell pepper, onion, vinegar, oil, optional jalapeño, ground pepper, herbs, and sugar in a large bowl.

  3. Stir in the remaining 1 cup of diced watermelon.

  4. Chill the gazpacho until ready to serve.
