Instructions

Heat olive oil in a Dutch oven over medium-high heat; add onion, salt, and garlic, cooking for 2 minutes until soft.

Add ground beef, break it up, and cook until browned.

Drain excess fat; then add spices and stir.

Stir in tomato sauce, optional beans, and water; reduce heat to low and simmer for 1 hour.

Combine masa flour with water, add to chili, stir, and cook for 10 more minutes; season with salt to taste.
