Walnut or Fruit-Filled Crescent Cookies (Roszke or Rosky)
Flaky crescent-shaped cookies, known as Rosky, can be prepared with a walnut or fruit filling.

Instructions

Preheat the oven to 350 F and line baking sheets with parchment paper.

In a large bowl, combine butter, cream cheese, sugar, and vanilla until fluffy.

Add flour and baking powder to the butter mixture, blending thoroughly.

Divide the dough into 3 portions, cover, and chill for 2 hours or overnight.

Dust a work surface with equal parts granulated and confectioners' sugar.

Roll out one dough portion to 1/8-inch thick, then cut into 3-inch squares.

Place a teaspoon of filling on one corner of each square, roll it, and shape into a crescent.

Arrange on baking sheets with the seam down.

Bake for 20 minutes, or until edges are lightly browned.

Cool completely before storing; dust with confectioners' sugar prior to serving.

For walnut filling, combine all ingredients in a medium saucepan and cook over low heat until butter melts; cool before use.

For apricot or prune filling, combine ingredients in a medium saucepan, bring to a boil, then simmer for 8 minutes, stirring occasionally, until fruit softens and liquid is absorbed; puree and cool.
