Vin Chaud (French Mulled Wine)

Instructions

  1. Prepare a 1x5 inch strip of orange zest, carefully removing all white pith.

  2. Combine wine, sugar, cloves, cinnamon sticks, cardamom, and orange zest in a large saucepan.

  3. Heat the mixture over very low heat, stirring until the sugar dissolves and steam rises; do not allow it to boil.

  4. Maintain this low temperature, allowing the wine to steep with the spices for desired flavor.

  5. Strain the mulled wine through a fine-mesh sieve into a clean saucepan, then discard the spices.

  6. Cover the pan and let the vin chaud stand for 5 to 10 minutes.

  7. Add 1 to 2 teaspoons of Cognac to four individual warmed mugs, then ladle in the mulled wine.
