Instructions

  1. Start boiling half a cup of water.

  2. Place tamarind pulp in a heatproof bowl; pour boiling water over it and soak for ten minutes.

  3. Strain the pulp through a wire mesh, pressing out all liquid and discarding solids.

  4. Mash chili, garlic, and sugar into a paste.

  5. Gradually mix in the tamarind extract and fish sauce.
