Vietnamese Tamarind Dipping Sauce

Instructions

Start boiling half a cup of water.

Place tamarind pulp in a heatproof bowl; pour boiling water over it and soak for ten minutes.

Strain the pulp through a wire mesh, pressing out all liquid and discarding solids.

Mash chili, garlic, and sugar into a paste.

Gradually mix in the tamarind extract and fish sauce.
