Devein shrimp while keeping shells on, then rinse and pat dry.

Heat peanut oil and sesame oil in a saut the pan over medium-high heat.

Add shrimp and honey or brown sugar; stir-fry 1 to 2 minutes.

Add garlic, shallot, and chile peppers; stir-fry another 1 to 2 minutes.

Pour in stock (or water), fish sauce, and salt; raise heat to highest setting.

Boil until the pan is nearly dry, about 1 to 2 minutes.
