Vietnamese-Style Fried Rice

Instructions

Heat peanut oil in a wok or frying pan over medium-high heat.

Pour in beaten eggs, cook for 1.5 minutes to form a pancake, then remove, slice thinly, and set aside.

Sauté lemongrass, garlic, and shallots over medium heat until aromatic.

Increase heat, add carrots and peas, and stir-fry for 30 seconds.

Add sliced lap cheong and barbecued pork, then stir-fry for 1 minute.

Incorporate rice and fish sauce, stir-frying until the rice is heated through.

Turn off heat, add the sliced egg and lime juice, then toss to combine.

Serve hot, garnished with cilantro, lemon basil, or mint.
