Vietnamese-Style Fried Rice

Instructions

  1. Heat peanut oil in a wok or frying pan over medium-high heat.

  2. Pour in beaten eggs, cook for 1.5 minutes to form a pancake, then remove, slice thinly, and set aside.

  3. Sauté lemongrass, garlic, and shallots over medium heat until aromatic.

  4. Increase heat, add carrots and peas, and stir-fry for 30 seconds.

  5. Add sliced lap cheong and barbecued pork, then stir-fry for 1 minute.

  6. Incorporate rice and fish sauce, stir-frying until the rice is heated through.

  7. Turn off heat, add the sliced egg and lime juice, then toss to combine.

  8. Serve hot, garnished with cilantro, lemon basil, or mint.
