Versatile Sandwich Buns
Soft buns perfect for barbecue or as burger buns can be prepared by hand or with a stand mixer.

Instructions

Preheat oven to 400 F.

Combine yeast and water; let stand 5 minutes.

Add milk, flour, salt, sugar, and melted butter; mix until dough forms.

Knead dough for 10 minutes until smooth and elastic, adding flour as needed.

Grease a large bowl, coat the dough, cover, and let rise for 1 hour until doubled.

Line two baking sheets with parchment paper. Punch down dough, knead briefly, and rest for 5 minutes.

Divide dough into 10 (4-ounce) portions.

Shape portions into balls, flatten slightly, and place on baking sheets.

Firmly stamp the tops (if using a stamp), dust with flour, then invert rolls; otherwise, simply flatten.

Cover rolls and let rise until doubled, approximately 25-35 minutes.

Sprinkle rolls with cornmeal, then invert them to reveal the stamp impression.

Whisk egg and water for an egg wash, brush over buns, and sprinkle with seeds.

Bake for 16-20 minutes, or until golden brown.
