Versatile Sandwich Buns

Instructions

  1. Preheat oven to 400 F.

  2. Combine yeast and water; let stand 5 minutes.

  3. Add milk, flour, salt, sugar, and melted butter; mix until dough forms.

  4. Knead dough for 10 minutes until smooth and elastic, adding flour as needed.

  5. Grease a large bowl, coat the dough, cover, and let rise for 1 hour until doubled.

  6. Line two baking sheets with parchment paper. Punch down dough, knead briefly, and rest for 5 minutes.

  7. Divide dough into 10 (4-ounce) portions.

  8. Shape portions into balls, flatten slightly, and place on baking sheets.

  9. Firmly stamp the tops (if using a stamp), dust with flour, then invert rolls; otherwise, simply flatten.

  10. Cover rolls and let rise until doubled, approximately 25-35 minutes.

  11. Sprinkle rolls with cornmeal, then invert them to reveal the stamp impression.

  12. Whisk egg and water for an egg wash, brush over buns, and sprinkle with seeds.

  13. Bake for 16-20 minutes, or until golden brown.
