Venison Curry With Rice

An easy curry venison dish features venison, apples, and an array of spices, served alongside rice for a complete meal.

Instructions

  1. Start cooking rice according to package directions.

  2. In 2 tablespoons of oil, brown the venison in a skillet, then remove, cover, and refrigerate.

  3. Add 1 tablespoon of oil to the same skillet, then saute onions, celery, and apples until the onions are translucent.

  4. Stir in curry powder and cook for 5 minutes; add remaining seasonings and beef broth, then simmer for 20 minutes, adjusting seasonings to taste.

  5. Whisk flour with water, add to the broth, and cook for 5 minutes, stirring until the mixture thickens.

  6. Remove from heat and let the mixture stand for 30 minutes.

  7. Whisk an egg yolk into evaporated milk or cream if using.

  8. Reheat the curry mixture, add the venison, and stir in the milk or cream mixture, heating to a simmer without boiling.

  9. Serve the curried venison over hot cooked rice.
