Venezuelan Black Beans Recipe

Instructions

  1. Rinse beans and soak them overnight in water.

  2. Drain soaked beans, cover with fresh water or stock, add bell pepper, and simmer on low heat until tender.

  3. If using bacon, cook until crispy in a skillet, then remove. Sauté chopped onion and minced garlic in the rendered fat (or olive oil) until soft and fragrant.

  4. Stir cumin and brown sugar into the onion mixture, continuing to cook until browned.

  5. Remove two cups of tender beans and blend with the sautéed onion mixture.

  6. Return the blended mixture to the pot with the remaining beans. Season with salt, pepper, and optional Worcestershire sauce.

  7. Continue cooking until beans are very tender, adjusting water to achieve the desired consistency.
