Vegetarian Tofu Chili
A flavorful vegetarian and vegan tofu chili that serves as an excellent potluck option.

Saute tofu in 3 tablespoons vegetable oil in a large pot over medium-high heat for 3 minutes.

Stir in onion, green pepper, garlic, 1 cup mushrooms, 3 tablespoons chili powder, salt, pepper, 1/4 teaspoon cayenne, and 1/2 teaspoon cumin; cook for 5 minutes until vegetables are tender.

Add tomato sauce, whole or diced tomatoes, kidney beans, and optional 1 tablespoon sugar; bring to a slow simmer. Cover and cook for at least 45 minutes.
