Instructions

  1. In a large skillet, heat five-spice powder, ginger, turmeric, and cayenne in oil for one minute, stirring until fragrant.

  2. Reduce heat to medium-low, add coconut milk, vegetable broth, potatoes, seitan, cloves, and salt; stir to combine. Cover and cook for 15 to 20 minutes, stirring occasionally.

  3. Uncover, then stir in peanut butter, cinnamon, sugar, and peanuts or cashews; heat for one additional minute.

  4. Serve the curry over rice. To thicken, dissolve 1 tablespoon cornstarch in 3 tablespoons water, add to the curry, and simmer for 2 to 3 minutes.
