Vegetarian Stuffed Tomatoes Recipe

Instructions

  1. Preheat the oven to 4000F (2000C) with the rack in the center.

  2. Cut the top off each tomato, scoop out the pulp, and drain excess liquid and seeds in a colander.

  3. Sprinkle the inside of the hollowed tomatoes with 1/4 teaspoon salt and place them upside down to drain further.

  4. Chop the drained tomato pulp, then combine it in a bowl with breadcrumbs, Parmesan, mozzarella, garlic, herbs, 1/2 teaspoon salt, pepper, and olive oil; mix thoroughly.

  5. Place the hollowed tomatoes upright in a baking dish or on a sheet pan, then fill each with the prepared stuffing.

  6. Bake for 15 to 25 minutes, until the tomato skin begins to crack and the filling is bubbly and cheese is melted; optionally, broil for 2 minutes.

  7. Garnish with fresh parsley before serving.
