Vegetarian Stuffed Acorn Squash Recipe With Cornbread Stuffing

Instructions

  1. Preheat the oven to 400 F.

  2. Halve each acorn squash, remove seeds, and brush with softened margarine.

  3. Sauté onion, celery, and apple in olive oil for 6 to 8 minutes; then stir in maple syrup, raisins, herbs, salt, and pepper.

  4. Combine stuffing mix with the sautéed mixture in a large bowl, then spoon into each squash half.

  5. Cover each stuffed squash half with foil, place on a baking sheet, and bake for 40 to 45 minutes until soft.

  6. Serve hot, optionally with vegetarian gravy.
