Vegetarian Pumpkin Dumplings

Instructions

  1. Bring a large pot of salted water to a boil.

  2. Whisk pumpkin, egg replacer, salt, nutmeg, and baking powder in a large bowl.

  3. Gradually add flour to form a soft dough.

  4. Drop teaspoonfuls of dough into the boiling water; boil for 10 to 12 minutes.

  5. Remove and drain dumplings.

  6. Melt margarine in a large skillet over medium heat; sauté dumplings for 7 to 10 minutes until lightly browned.

  7. Garnish with Parmesan or a vegan cheese substitute, if desired, and serve hot.
