Instructions

  1. Brush portobello mushrooms and onion slices with olive oil, then season with 1/2 tsp salt and 1/4 tsp pepper.

  2. Heat a large skillet or grill pan over medium heat; cook mushrooms for 8-10 minutes, turning once, until tender.

  3. Transfer cooked mushrooms to a plate, cavity-side up, and cover to keep warm.

  4. In the same pan, cook onion slices for about 8 minutes, turning occasionally, until golden brown.

  5. While onions cook, combine half an avocado, yogurt, minced garlic, and remaining salt and pepper in a small bowl; mash until smooth.

  6. To assemble, spoon onions and optional roasted red peppers into mushroom cavities. Spread avocado mixture on bun bottoms, top with stuffed mushrooms, remaining sliced avocado, and additional fixings.
