Vegetarian Oven-Baked Cheese and Bell Pepper Quesadillas

Instructions

  1. Preheat oven to 3750F and lightly grease a baking sheet.

  2. Heat oil in a large skillet over medium heat.

  3. Cook sliced bell peppers with cumin, salt, pepper, and lime juice for 3 to 5 minutes until soft.

  4. Place four tortillas on the prepared baking sheet. Layer each with peppers and cheese, then top with another tortilla.

  5. Bake for 10 minutes, or until the cheese is melted.

  6. Cool slightly, then slice and serve, optionally with desired toppings.
